Very Berry Mess

Serves 1

What you’ll need:

  • Handful of frozen mixed berries
  • 3 tbs total 0% yoghurt
  • 1 tbs desiccated coconut
  • drizzle of runny honey
  • 1 tsp raw cacao nibs
  • 1 tsp pumpkin seeds

This is such an awesome dessert – like a super healthy, super tasty ice cream or summer pudding. Low cal, high taste!

How to make:

1.
Blitz the berries with a little warm water in a food processor or nutri-bullet so that they turn into a lumpy pulp.
2.
Tip the berry compote into a bowl and top with yoghurt. Combine gently and drizzle over the honey.
3.
Sprinkle on the coconut, seeds and nibs and serve.

The fun part:

The only way to possibly make this combo even better would be to add a mini bag of crushed party rings (oops, there – I said it!).
