Pheebs Soup

Serves 2-4

What you’ll need:

  • 300ml passata
  • chicken stock cube
  • ¾ pint water
  • 1 white onion
  • 1 pepper (red or yellow)
  • 4 carrots
  • dash of Worcestershire sauce (optional)
  • sprinkle of mixed herbs.
  • 2 cloves of garlic
  • 1 tbs tomato puree
  • 1 tbs brown sugar
  • salt and pepper

Pheebs made me this delicious soup to help me feel better – it's so good, it deserves a mention as a recipe. Nourishing soul food by the Pheebster!

How to make:

Chop all the vegetables into small chunks. Peel and crush the garlic. Add some olive oil to a large pan and stir in the onion. Continue to stir until softened. Then add the carrots and stir for a further 5 mins on a medium heat. Add a splash of Worcestershire sauce.

Add the peppers and garlic and mix in well. Then add the puree, passata and sugar and combine with the vegetables. Add the seasoning to your taste requirements. Mix the stock with hot water and pour into the pan. Allow to simmer for 10 mins.

Allow the soup to cool slightly and blitz in a blender until smooth. Season with salt, pepper and mixed herbs. You can top with a little finely chopped coriander if you like. Serve with chunky bread and butter.

The fun part:

This was perfect as it is. But it was quite sweet with the sugar and needs the right amount of sugar and salt to balance to your taste. To add that firey touch, pop in some chilli flakes.
