Pheebs’ Crunchy Choco Balls

Pheebs’ Crunchy Choco Balls

Serves 4-6

What you’ll need:

  • 6 dates
  • 2 tbs runny honey
  • 4 nairns gluten free chocolate oat biscuits
  • handful of cashew nuts
  • 1tbs peanut butter (we like Pic's Smooth for this)
  • 50g dark chocolate (we use Lindt Dark Orange for this)

Best Balls Ever! But be warned, they won't last long – they taste like a Malteser/M&M Combo. Pheebs loved these and enjoyed rolling the balls. Aim for them to be bite-sized.

How to make:

1.
Blend the nuts in a food processor or nutri-bullet until they resemble crumbs. Then add the dates and biscuits and blend again.
2.
Add the honey and peanut butter and blitz again. Tip the mixture into a bowl. It should resemble a soft biscuit like consistency.
3.
Roll the mixture into balls - these should be a little bigger than a Malteser shaped ball and set aside. You could get the kids to do this job!
4.
Place a mixing bowl over a saucepan of boiling water and add the chocolate pieces. Stir occasionally until melted.
5.
Once melted, remove the bowl of chocolate from the pan and add the balls into the chocolate a few at a time. Set aside once fully coated.
6.
Place the coated balls on a tray and leave in the fridge for a couple of hours to set - then enjoy!

The fun part:

You can go as nuts as you like with these balls. But keeping them simple is the key. Try dark chocolate mint instead of chocolate orange for a coating. Or roll in coconut for some extra texture.
