What you’ll need:
- 300g porridge oats (we use gluten free varieties)
- 250g nuts (mixed variety - almond, cashew, hazelnuts)
- 1 heaped tbs coconut oil (melted)
- 1 tsp runny honey (or maple syrup if vegan)
- 1 tsp vanilla essence
- 50g desiccated coconut
- 50g raisins
- 50g jewelled cranberries
I can't get enough of the gorgeous granola at the moment – it tastes amazing without heaps of sugar and hidden nasties. Also packed full of protein from the nuts - winner!
How to make:
In a bowl add the oats, nuts, oil, vanilla and honey. Mix well. Tip into an oven proof dish and bake for 15 mins.
After 15 mins remove from oven and add in desiccated coconut, raisins and cranberries and stir. Bake for a further 10 mins.
Remove from oven and allow to cool. Then place in an airtight container and enjoy!
The fun part:
This always tastes better the day after it’s made. For extra oomph, add some pumpkin seeds and serve with strawberries and blueberries and almond milk – full powerhouse breakfast!
